Last night I made the most delicious soup. I use the word made loosely since it cooked in the crockpot, but still. It was so scrumptious that I had it again for lunch today. I was so famished that I didn’t even wait for it to fully heat in the microwave, and you know what?!
It was perfect.
Here’s the recipe should you want to let your taste buds dance! You can thank me later 🙂
Ingredients:

1 c green bell pepper chopped

1 c celery

1 c chopped onion

1 c zucchini chopped

2 cans 14oz chicken broth

1 can diced tomatoes (Italian style) with liquid

fresh green beans

refrigerated cheese or spinach (or both) tortellini

Parmesan cheese
Toss onion, celery, and zucchini into a pan with olive oil and saute until onion is translucent. Place in crockpot. Add broth and tomatoes. Cook on high about 6 hours. ( I really only cooked it for about 3). Add green beans and tortellini, cook for another 20 minutes. Serve with Parmesan cheese on top.
