This is my go to recipe when someone has a baby, or is sick and needs some comfort food, or really my any time I don’t know what to make meal. It’s fabulous, I tell you! I found it several years ago in a magazine, but I honestly don’t know which one seeing as how I cut it out and taped it into my own recipe book. Had I known it would be such a hit and that I would one day be blogging it, I would have noted the creator of this recipe.

Anyway, I’ve promised several people this recipe and then I’ve forgotten (imagine that!). Since I’m sitting here and  have it on the brain, I shall part with my dear recipe now 🙂

Ingredients:

4 chicken breasts cooked and shredded (I boil them and use a two forks to shred them apart)

A small onion, diced

Minced garlic (I don’t know how much I just toss in a teaspoon full or so)

1 cup of salsa

1 cup of cheese

4 oz of cream cheese

1 T cumin (I consider this the secret ingredient)

Directions: Disclaimer: These are not verbatim from the recipe, since it’s not in front of me, therefore, the measurements I used in the directions as opposed to the ingredients’ list are suggestions 🙂

Shred the cooked chicken and set aside. In a large skillet add the onion and garlic and cook for just a few minutes. Add the chicken and toss it around. Add 1/4 cup of salsa (I couldn’t find my measuring cup and accidentally added about a cup and all turned out just as tasty), cream cheese (I know it calls for 4 oz, but I always add just a bit more, maybe about 6 oz – just for good measure), cumin (again I didn’t measure and I think I added more than a tablespoon, but I love the flavor), mix all together until cream cheese is spread evenly throughout the mixture. Add 1/2 cup of cheese, I like to use the monterrey jack/cheddar mixture, mix again. Spread mixture into tortillas, roll ’em up and put in a baking dish. Top with remaining salsa (unless you pour it from the bottle like I do, then don’t use all of it!) and the remaining cheese…or a bit more from the bag. Bake at 350 for about 20 minutes and voila! Sensational, not so good for you, but ever so tasty cream cheesy chicken enchiladas!
