I’ve recently posted a couple pictures of my new favorite recipe on my Instagram feed. This mango salsa is so fabulous and goes well with so many things. You can grill steak or fajitas and top it with this, you can grill chicken and top it with this, you can even add it to your burgers if you so wish. The other day I had a very powerful need for it, so we just had it with some chips…and perhaps a little by itself. 🙂

I thought I’d share the recipe so it can become your new favorite, too! This one is adapted from Cooking Light Magazine 🙂

Ingredients:

1/2 cup chopped red onion

4 tablespoons olive oil

2 tablespoons cider vinegar (I was all out so I used salad vinegar and it’s great!)

1/2 teaspoon sugar

1/2 teaspoon grated lemon rind (I just used a splash of lemon juice – fresh out of lemons)

2 ripe mangos, peeled and chopped

2 serrano peppers, seeded and finely chopped (The picture in the magazine shows that the peppers are red. Charley came home with these green ones and said they were serranos. I have no idea, but the green ones work just fine.)

Add all the chopped ingredients to a bowl, like so…

Add your olive oil, vinegar, lemon juice, and small amount of sugar (really it doesn’t even need the sugar and calls for more than I put in). Mix it all up, eat, experience Utopia! 🙂
